This is an easy recipe to make in the morning before work and then let it cook all day in your crock pot. If your family doesn't like squash, just add another cup of baby carrots and omit the butternut squash.
Ingredients
1 tablespoon olive oil
1 poound diced pork
1 onion, chopped
2 cloves garlic, minced
1/4 teaspoon salt
1/8 teaspoon pepper
1 cup 1" butternut squash, peeled and cubed
16-oz. package baby carrots
5 potatoes, unpeeled, quartered
12-oz. jar homestyle pork gravy
1/4 cup ketchup
1 teaspoon dried sage
1/2 teaspoon dried thyme
1/2 cup water
Directions
Heat olive oil in nonstick skillet and add onions. Sprinkle pork with salt and pepper and add to onions in skillet. Cook, stirring frequently, until pork is browned and onion is tender--about 5 minutes. Place all ingredients in 4-5 quart crock pot and stir to blend. Cover crock pot and cook on low for 7-8 hours. Makes 6 servings
