Chef Tony's Autumn Harvest Mash


Here is a delicious recipe from Personal Chef Tony Lison in Green Bay. It’s a great way to use several of the products in the October Traditional Package. Enjoy!

Autumn Harvest Mash

Ingredients
6 medium potatoes, washed, peeled and cubed
1/2 acorn squash, rind removed and cubed
1 medium onion, chopped
3 quarts lightly salted water
2 pears, cored, peeled and chopped
1/2 stick butter
milk as needed, about 1/4-1/2 cup

Directions
Boil the potatoes, squash and chopped onion until the potatoes are easily pierced with a fork. Add the pears for the last 7-8 minutes. Drain and add butter and a little milk. Mash to smooth consistency, adding milk as needed. Serve while warm. Serving suggestions: Have this side with the chicken breast fillets and some grilled corn. Mandarin oranges and kiwi make a great chilled dessert.
