Paulette's Easy Chicken With Orange Sauce


Use the chicken breast fillets and mandarin oranges from the September Traditional Package to make this delicious dinner!

Ingredients
4 boneless, skinless chicken breast halves, flattened
2 tablespoons margarine
¼ cup chopped sweet onion
1 11-ounce can mandarin oranges, drained
1 ½ cup orange juice
½ teaspoon tarragon
1/8 teaspoon pepper
1 tablespoon flour
1 cup evaporated skim milk
¼ cup slivered almonds, toasted

salt (optional)

Directions
Sauté chicken breasts in margarine in large skillet over medium heat until browned and cooked through (about 8 minutes). Remove to platter and keep warm.

In the same skillet, sauté onion just until tender. Add mandarin oranges, juice, tarragon, pepper and salt, if desired.

Gradually add flour to milk and stir with fork until smooth. Add milk to skillet. Cook, stirring constantly until hot and slightly thickened. Spoon over chicken, top with almonds and serve.

This is great served with rice and your favorite green vegetable.
