Tuna and Lettuce Salad

Ingredients:
1 can tuna
3 tablespoons light mayonnaise
2 tablespoons olive or vegetable oil
5 tablespoons vinegar (Balsamic is best!)
Your favorite lettuce and salad vegetables
Salt and pepper to taste

Directions:
Wash and cut the lettuce and other salad vegetables—whatever’s fresh is best—into bite-size pieces and put them into a large bowl. Combine oil, vinegar, salt and pepper in a small bowl or sealable plastic container. Use a fork to mix the mayonnaise and tuna in a separate bowl. Whisk or shake the oil and vinegar dressing, drizzle over the lettuce and other vegetables and toss. Put the vegetables on your plate and then top with the tuna mixture. 1 can of tuna will make 2 servings. Enjoy with a fresh piece of fruit for a delicious and healthy summer lunch or dinner!
