Ingredients
1 pound cooked smoked sausage
3-4 tablespoons olive oil or cooking oil
4 large unpeeled potatoes, cut into 1/2-inch cubes
2 medium onions, cut into thin wedges
8 oz. mushrooms, cut in quarters
1 large green pepper, sliced into 1/2-inch strips
1 teaspoon dried thyme, crushed
1/2 teaspoon dried cumin
1/4 teaspoon salt
1/4 teaspoon pepper
Directions
1. Pour 3 tablespoons oil into a heavy 12-inch ovenproof skillet; heat over medium high heat. Cook potatoes, onions and mushrooms uncovered in hot oil over medium-high heat about 12 minutes or until potatoes are nearly tender, stirring occasionally.
2. While potato mixture is cooking, diagonally slice sausage 1/4 inch thick. Add sausage and green pepper to potato mixture. Add 1 tablespoon oil if necessary to prevent sticking. Cook uncovered about 10 minutes or until potatoes and onions are tender and slightly brown, stirring often.
3. Stir in thyme, cumin, salt and pepper; cook and stir 1 minute more. Makes 6 main dish servings.
