Paulette's Veggie Noodle Salad


Ingredients
2 large zucchini, cut in half lengthwise then cut in 1/2-inch pieces
1 teaspoon olive or vegetable oil
8 ounces linguini, cooked according to package directions and rinsed
under cold water
1 pint yellow cherry tomatoes, cut in half
1 jar (7 ounces) roasted red peppers, drained and chopped
1/2 cup chopped fresh basil
1/3 cup chopped flat leaf parsley
grated Parmesan cheese


Dressing

1/4 cup vegetable oil

2 tablespoon white wine vinegar

1 tablespoon minced onion

1/2 teaspoon sugar

salt and pepper to taste


Directions
1. Heat oven to 400 degrees F. Toss zucchini with 1 teaspoon oil and place on baking sheet. Roast 30 minutes. Cool.


2. Combine dressing ingredients.


3. Toss linguini with cooled zucchini, tomatoes, peppers, herbs and dressing. Top with grated Parmesan.
