Main Ingredients
2 whole chicken breasts, cooked and cubed
1/2 cantaloupe, cubed
2 stalks of celery, sliced
1/2 pound of seedless grapes, cut in half
½ sweet red pepper, sliced into thin ½-inch strips
1 carrot, sliced into matchstick-sized pieces
½ red onion, diced
1/2 cup of toasted, slivered almonds
Dressing Ingredients
1/4 cup mayonnaise
1/2 teaspoon lemon juice
1/8 teaspoon curry powder
2 tablespoons milk
Directions
Prepare fruit, celery and chicken and combine in a medium bowl. Mix dressing and gently stir with chicken, etc. Refrigerate for 2 hours. Prepare onion, red pepper, almonds and onion. Toss together and sprinkle on top of salad, like confetti, just before serving. Serve with fancy crackers. Makes 4-6 servings.
