Ingredients
3 to 3-1/2 pounds chicken, cut up and skin removed
2 cans (15 oz.) diced tomatoes, undrained
1 medium onion, chopped
1 green bell pepper, chopped
1 tablespoon Italian herbs
8 oz. sliced mushrooms, optional
Garlic, to taste
Red pepper flakes, to taste
Directions
Place cut-up chicken in slow cooker, cover with diced tomatoes, onion, green pepper, minced garlic (to taste), Italian herbs, red pepper flakes to taste, and mushrooms if you have them.
Cook all on low 6-8 hours until the chicken is falling apart. Serve over your favorite cooked pasta and top with grated parmesan cheese.
