Main Ingredients:
1/2 cup walnuts, coarsely chopped
2 cans green beans
Vinaigrette Ingredients:
1/4 cup red wine vinegar
1 Tablespoon lemon juice
2 teaspoons sugar
2 teaspoons chopped fresh oregano (or 1/2 teaspoon dried)
1 teaspoon garlic, minced
salt and pepper to taste
1/2 cup sliced onions (red or yellow)
2-3 Tablespoons feta cheese (optional)
Directions:
Preheat the oven to 450 degrees. Spread the walnuts on a baking sheet and toast for 3-4 minutes. In a large bowl, whisk vinegar, lemon juice, sugar, oregano, garlic, salt and pepper. Toss the green beans, walnuts and sliced onions in the vinaigrette and transfer to a serving platter. Sprinkle with crumbled feta cheese if desired. Serve warm or at room temperature. Serves 6-8 people.
