Ingredients:
1 acorn squash, halved from stem to tip and seeds removed
½ lb. hamburger
½ medium onion, diced finely
1 stalk celery, diced finely
½ tablespoon olive oil
Salt and pepper to taste
4 apples halved and cored, unpeeled
1 tablespoon brown sugar
2 tablespoons butter in thin slices
Cinnamon
Directions:
Preheat oven to 350 degrees. Brown the hamburger and cook until lightly done and crumbly. Add the diced onion and celery and cook with the meat until vegetables are just beginning to soften. Add salt and pepper to taste. Prick the flesh of the squash halves deeply with a kitchen fork. Divide the meat mixture among the halved squash and place in a deep-sided 9x13 baking dish. Place in oven for a total of about one hour until a fork easily pierces the baked squash flesh. After the squash has baked for 30 minutes, place the apples skin side down in another pan or baking dish. Sprinkle with brown sugar and place a small butter pat on each half. Sprinkle with cinnamon. Place in the oven with the squash and bake until both are done. Handle carefully when plating both as they will be very hot and soft.
