Beef and Veggie Stir-Fry


Ingredients:
1 cup whole grain rice
3 cups water
Pinch of salt
12 oz. diced beef sirloin
4 tablespoons canola or other vegetable oil
1 tablespoon soy sauce
1 tablespoon sesame oil
1 can water chestnuts
½ cup peanuts
1 bunch broccoli, chopped
1 onion, chopped coarsely
4 sticks celery, sliced thinly on an angle
Other fresh vegetables as available

Directions:
Add a pinch of salt to the water in a medium-sized pot. Cover and bring water to a boil, then add rice and turn to low heat. Cook for 20 minutes or until the rice is light and fluffy. Set aside covered. Heat a wok or regular frying pan until it’s nice and hot, then add vegetable oil and let it heat up. Add the harder vegetables like carrots and water chestnuts and let cook until they start to get soft. Then add the diced beef, and finally the softer vegetables. Just before the vegetable/beef mixture is ready to serve, add the sesame oil and stir. Serve the vegetable/beef mixture over rice and garnish with peanuts. Makes 3-4 servings.
