Ingredients:
3 grapefruits
1 large orange, peeled and sectioned
1 medium banana, sliced
1/3 cup pitted prunes, coarsely snipped
1 Tablespoon butter, cut in small pieces
2 Tablespoons brown sugar
1/2 teaspoon cinnamon
Directions:
Preheat oven to 450 degrees. Halve each grapefruit and if necessary cut a very thin
slice from the bottom of each half so the grapefruit will sit flat. Use a grapefruit
knife or other small knife to cut around the outer edge to loosen the fruit from
the skin. Cut between each segment to loosen it from membrane. Place the grapefruit
halves in a rectangular three-quart baking dish. In a bowl, combine the orange sections,
banana slices and prunes. Mound this mixture on top of the grapefruit halves. Dot
each grapefruit half with a little butter. Combine the brown sugar and cinnamon
in a small bowl and sprinkle on top of the fruit mixture. Bake uncovered for twelve
minutes or until the grapefruit is warm and the topping is hot. Serves six.
