Cabbage and Apple Salad


This recipe is from SHARE member Muriel Messer from the Polo Connection host site in Illinois!

Ingredients:
1/4 cup sugar
3 teaspoons cider vinegar
1 teaspoon cornstarch
2 Tablespoons mayonnaise
1/2 teaspoon celery seed
2 Tablespoons plain yogurt
1/4 teaspoon salt
1/8 teaspoon dry mustard
3/4 cup water
6 cups shredded cabbage
2 apples, cored and chopped

Directions:
Combine sugar, cornstarch, celery seed, salt and dry mustard in a small pan. Gradually add water and vinegar until the mixture is smooth. Heat on high, uncovered, for 2-3 minutes or until the mixture boils and thickens slightly, stirring occasionally. Refrigerate until chilled (about 3 hours). Mix in mayonnaise and yogurt. Combine cabbage and apples in serving bowl and add dressing. Toss lightly to coat. Serve immediately or refrigerate. Makes about 4 servings.
