Ingredients:
4 medium potatoes (or 1 potato per serving)
1 Tablespoon salt, plus a pinch or two more
1 stick (or 1/2 cup) melted butter
cold water
Directions:
First, wash and scrub the potatoes, leaving the skins on. With each potato, cut
in half the long way, then each piece in half the long way again, and then all four
in half again to make eight wedges. Place the wedges in a bowl large enough to hold
them and cover them with cold water and 1 Tablespoon of salt for at least 1 hour,
or as long as overnight. Preheat the oven to 375 degrees. Drain the potato wedges
and pat dry with a towel. Melt the stick of butter and brush or gently toss the
wedges until lightly coated with butter and place skin side down on a rimmed baking
sheet. Sprinkle with salt as desired and place in oven for 45 minutes or until nicely
browned and crispy. They would make a great side dish for the flounder fillets or
the pork cutlets in the Traditional Package. You can also serve these potatoes at
breakfast.
