Believe it or not, there’s a science to grilling the perfect sausage—and a lot of different ways to do it. Here are some tips on grilling the sweet Italian sausages in the July Traditional Package or any other sausages. For the juiciest results, parboil your sausages only long enough to tighten the skin before putting them on the grill. You can even add your favorite spice to the water for added flavor—for Italian sausages, try oregano or basil. To eliminate burning and flare-ups on the grill, keep the fire low to allow the sausage to cook gently and hold in flavor. Or try cutting the sausage lengthwise about 3/4 of the way through, then lay it flat (skin side up) on the grill. This will give drier grilled sausages, but that’s OK if you are using them in a recipe such as jambalaya.
