Ingredients:
12 ounces diced beef sirloin, thawed
1 bell pepper, chopped
1 medium onion, chopped
2 cups sliced mushrooms
Vegetable oil (grapeseed is a healthy alternative)
1 cup brown rice
1 can cream of mushroom soup
1 cup sour cream
1/8 cup Worcestershire sauce
1 clove garlic, sliced
salt and pepper to taste
3 teaspoons ketchup
3 Tablespoons butter
Directions:
In a medium-sized pot, start cooking the brown rice 45 minutes prior to meal time. For brown rice, use 3 cups of water. White rice needs just 2 cups of water and 20-30 minutes. Heat a frying pan alone on medium high heat, then add the oil and let it come up to temperature. Add the peppers, onion and mushroom and sauté until slightly tender. Then add the diced beef and cook until the meat is slightly pink in the center. Add the garlic and sauté briefly. Add the soup, Worcestershire sauce, ketchup, salt and pepper. Simmer on low until beef is cooked through, adding sour cream at the very end. When rice is done cooking, add the 3 Tablespoons of butter and stir. Serve meat mixture over rice. Serves 4.
