Apple & Potato Salad


Ingredients:
3-4 potatoes
3-4 celery stalks, finely chopped
1 medium carrot, shredded
2 apples, peeled and cored
1/2 cup lemon poppy seed dressing
Fresh dill, chopped
Lemon juice

Directions:
Cook the potatoes in skins until done (but not too soft) and let cool. Peel and dice them into bite sized pieces. Chop the apples into bite-size pieces and toss in lemon juice. Add all other ingredients except the dill and toss gently to coat with the dressing. Sprinkle the dill over the top for garnish. Serves 4.
