Peppercorn Steaks

Ingredients:

4 sirloin steaks
1/4 cup black peppercorns
3 Tablespoons lime pepper seasoning
Vegetable or olive oil
Salt to taste

Directions:
Place the peppercorns in a mortar and pestle. You can also use a coffee grinder or food processor. Coarsely crush peppercorns until most of the corns are broken. Cover one side of the steaks with crushed pepper and press in firmly. Sprinkle the steaks with lime pepper seasoning and salt. Turn the steaks over and repeat. Place in the refrigerator for 3 hours, uncovered. Heat the grill and brush the grate with vegetable or olive oil. Place the steaks over the hottest part of the fire for 3 minutes, then turn them over for another 3 minutes. Move the steaks to a cooler part of grill and continue to cook with the lid closed until moments before they are done to your liking. Take the steaks off the grill and let them rest on a plate for 2-3 minutes before serving with steak sauce.
