Ingredients:
1 8-oz. pkg. light cream cheese, softened
1 Tablespoon skim milk
1 teaspoon lemon juice
1/4 Cup onion, finely chopped
1 small garlic clove, pressed
1 medium tomato, seeded & chopped
1/2 Cup green bell pepper, chopped
4 oz. imitation crab, coarsely chopped
2 Tablespoons fresh parsley, chopped
1/8 teaspoon salt (optional)
Directions:
In a medium mixing bowl, combine the cream cheese, milk, lemon juice, onion, garlic and salt if desired. Then gently fold in the remaining ingredients and scoop into a serving dish. Serve with whole grain crackers or hard breads for a healthy snack or appetizer. Serves 6.
