Ingredients:
2 8-oz. ham steaks
1/4 Cup soft light brown sugar
1/2 Cup raisins
1 Tablespoon cornstarch
1 can Mandarin orange slices
Dry mustard to taste
Ground cinnamon to taste
1/4 Cup honey
Directions:
In a sauce pan, combine the brown sugar, cornstarch, cinnamon and mustard. Mix well. Stir in the raisins, honey and Mandarin orange slices with the juice. Leave this mixture in the pan so that it is ready to heat as you prepare the ham steaks. Cut each ham steak in half, trim off any fat, and make small slices around the edges to prevent curling when cooking. Heat the liquid mixture to boiling and then let simmer over low heat, stirring often. Brown the steaks in a skillet over medium heat. Press down on the steaks, flipping them over as they become lightly browned on each side. Serve the ham steaks on plates and then pour the hot liquid mixture over them. Serves 4.
