Ingredients:
12 oz. brown-and-serve pork sausage links
1.5 pounds potatoes
1/2 onion
4 apple sauce cups
2 grapefruit
2 Tablespoons vegetable oil
Pinch of salt
Directions:
Scrub and dice the potatoes. Let them soak in cold, salted water for 20-30 minutes, then drain and pat dry. Heat the oil in a skillet over medium high heat until it shimmers but is not smoking. Carefully add the diced potatoes and lightly toss them in the oil once to coat. Turn them only occasionally until they are browned and crispy on all sides. Chop the onion as the potatoes begin to cook and add it to the skillet. Stir once to mix them in. Cut the sausages into bite-size pieces and add the to the potato/onion mix. Toss and heat through. When all the ingredients are cooked fully, serve on plates with a grapefruit half and an applesauce cup per serving. Serves 4.
