Ingredients:
1 acorn or carnival squash
2 apples
1/4 Cup + 1 Tablespoon melted butter
1/4 Cup honey
Salt
Directions:
Preheat oven to 400 degrees. Wash the squash, cut in half lengthwise and scoop out the seeds and fibers. Place the squash in a baking dish cut-side down and add half an inch of boiling water. Bake for 20 minutes. While the squash is in the oven, melt the butter in a small pan. Peel, core and dice the apples into a small bowl. Mix the apples with 1/4 cup of the melted butter and the honey. Take the squash out of the oven. Using a hot pad and fork, turn the squash cut-side up. Brush the cut parts with the remaining melted butter and sprinkle lightly with salt. Fill the centers of the squash with the apple mixture, cover with aluminum foil and continue baking at 400 degrees for 30 minutes. Slice each squash in half again and serve. Serves 4.
