Camp Potatoes


Ingredients:
5 medium potatoes, washed & unpeeled
4 slices bacon
1 clove garlic, chopped
1 large onion, chopped
Salt & pepper to taste
1 Tablespoon olive oil

Directions:
Put the bacon slices side by side in the center of a 12-inch square of heavy aluminum foil. Cut the potatoes into 1/2-inch square cubes and put on top of the bacon. Top the potatoes with onion, garlic and seasonings. Drizzle olive oil over the top. Fold the aluminum foil and seal all of the edges, creating a pouch. Place on a preheated grill or in the oven for 30-40 minutes. Remove from grill or oven and cut the foil across the top to open. Serves 6.
