Honey Chicken Kabobs


Ingredients:
1 lb. chicken tenderloins, cut into 1-inch cubes
1/3 Cup soy sauce
2 cloves garlic, crushed
2 bell peppers, cut into 2-inch pieces
1/4 Cup vegetable oil
1/3 Cup honey
5 small red onions, cut into 2-inch pieces
1 pint cherry tomatoes

Directions:
Whisk together the oil, honey, soy sauce, peppers, onion, tomatoes and garlic. Before adding the chicken, set aside a small amount of the liquid to brush over the chicken later. Add the chicken, cover and let marinate in the refrigerator for at least 2 hours or overnight (as well as the set-aside marinade). Preheat the grill on medium high heat. Drain the chicken and vegetables, then divide them evenly among the skewers. Cook the skewers on the grill, turning and brushing with the reserved marinade for about 12 to 15 minutes, or until the chicken is fully cooked. Serves 4.
