Ingredients:
3/4 Cup rotini or other pasta
3 teaspoons olive oil
1 pound chicken breast, cubed
1 small yellow onion, diced
3 cloves garlic, minced
1/2 teaspoon salt
1/4 Cup rice vinegar
1 teaspoon dried basil
1 can diced tomatoes
1 dash ground black pepper (optional)
Grated Parmesan cheese (optional)
Directions:
In a large pot, cook the pasta according to the package directions. When finished, drain and rinse the pasta with hot water. Set the pasta aside in a separate dish and keep warm. Heat the olive oil in the same pot used for pasta. Add the chicken, onion, garlic, tomatoes and salt. Sauté over high heat for 4 minutes, stirring frequently. Add the rice vinegar, garlic and basil and continue to cook on high 2-3 minutes more or until most of the vinegar has evaporated and the chicken is cooked through. Serve this mixture over the pasta and sprinkle with Parmesan cheese and black pepper if desired. Serves 4.
