Braised Pork Chops In Fruit


Ingredients:
1/4 Cup flour
Salt and pepper to taste
4 boneless pork chops
2 Tablespoons canola oil
1 15-oz. can mandarin oranges, undrained
1 apple, cored, peeled and coarsely chopped
2 pears, cored, peeled and coarsely chopped

Directions:
Mix the flour, salt and pepper in a shallow dish and lightly coat the pork chops. Heat the oil over medium high heat in an oven-proof skillet and preheat the oven to 300 degrees. When the oil in the skillet is shimmering, place the chops in the pan and brown until golden and crisp, about 4-5 minutes on each side. Remove the chops to a plate and put the undrained mandarin oranges and chopped fruits into the skillet, scraping the browned bits off the skillet to deglaze. Add the chops back into the skillet and carefully cover with foil. Bake for 1 hour or until the chops are cooked through. Serves 4.
