Ingredients:
12 oz. bacon
Pancake mix as needed
1-2 apples peeled, cored and chopped
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
Directions:
Fry the bacon, set it aside and allow it to cool until you can safely chop it. Prepare the pancake mix according to the package directions, but stir in the cinnamon, vanilla, apple bits and chopped bacon before cooking. Cook pancakes on a hot griddle or skillet on medium high heat. When small bubbles form and burst, flip to cook the other side. Serve with maple syrup and your favorite breakfast beverage or a side of eggs. Serves 4-6.
