Ingredients:
3/4 Cup onion, chopped
4-1/2 Cups potato, peeled & diced
2 Tablespoons margarine
2 Tablespoons flour
1 quart milk
Salt and pepper to taste
Directions:
Place the onions and potatoes in a sauce pan, cover with water and bring to a boil. Lower the heat and simmer until the potatoes and onions are soft. Drain in a colander and set aside. Melt the margarine in the sauce pan with low heat, add the flour and stir until smooth. Stir the flour and let it cook until it becomes slightly browned. Add the milk and keep this mixture on low heat until it thickens slightly, stirring occasionally. Add the onions and potatoes. Heat the soup to serving temperature and season lightly with salt and pepper. Makes 4-6 servings.
