Savory Bacon Muffins


Ingredients:

12 paper muffin cups

5 slices bacon

1-1/2 Cups all-purpose flour

1/2 Cup cornmeal

 2 teaspoons baking powder

 1/4 teaspoon salt

 1/4 teaspoon black pepper

 1/2 Cup cheddar cheese, shredded

 1 large egg, beaten

 1 cup milk

 3 Tablespoons unsalted butter, melted

Directions:

Preheat the oven to 400 degrees. Place the paper muffin cups into a muffin pan and set aside. Cook the bacon in a large skillet or microwave until crisp. Transfer the bacon to paper towels to drain, reserving 2 tablespoons of bacon fat from the pan. In a large bowl, whisk together the flour, cornmeal, baking powder, salt and pepper. Then stir the cheese into the mixture. In a small bowl, beat together the egg and milk and stir this into the dry ingredients. Crumble the bacon and add it to the batter as well as the reserved bacon fat and melted butter. Fold the mixture until blended and spoon it into the muffin pan. Bake for about 20 minutes, and let cool for 10 minutes before serving. Makes a dozen.
