Ingredients:
1.25 lb. chicken breast fillets
3 stalks celery, diced medium
1/2 sweet onion, diced
1 teaspoon seasoned salt
3 Tablespoons mayonnaise
1/2 Cup dried cherries or cranberries
1/2 Cup cashews, chopped
1 tomato, sliced thin
Lettuce leaves
Bread, croissants or ciabatta rolls, lightly toasted
Directions:
Boil the chicken breast fillets until cooked through. Let cool and then dice. Combine the first 7 ingredients including the chicken in a medium bowl. Slice the croissants or rolls and top with a generous portion of the chicken salad. Place the lettuce and tomato slices on top. Makes 6 sandwiches.
