Granny Omelet


Ingredients:
6 eggs, beaten
1 8 ounce ham steak cubed
1 medium onion, diced
3-4 green onions thinly sliced
2 medium Potatoes, washed and grated with skins on
1/2 cup grated cheddar cheese or Swiss
oil for cooking

Directions:
Heat about 1-2 tablespoons of oil in a large skillet over medium high heat till shimmering but not smoking. Add the grated potatoes and spread evenly after tossing in the oil. Resist stirring them until they form a crispy golden crust on the bottom. Turn the potato "pancake" over and crisp on the other side. Top with the onions, ham and the cheese. When the cheese melts, scramble the pan contents, then pour the egg mixture over and cook till the eggs are set. Add seasoning to your taste and enjoy with toast and fruit.
