Ingredients:
1 acorn squash
2 Cups stuffing mix
4 Tablespoons butter
4 Tablespoons brown sugar
1-1/2 Cups chicken broth
Salt and pepper to taste
Garlic powder to taste
Onion powder to taste
Directions:
Preheat oven to 400 degrees. Using a fork, poke holes in the top and bottom of the squash, then place on a baking sheet. Bake for 40 minutes, or until squash begins to soften. Prepare stuffing mix according to package directions. Add butter, brown sugar, chicken broth, salt, pepper, garlic powder and onion powder to stuffing mix, stir and set aside. Remove squash from oven and let cool. Cut open top of squash and remove seeds, then use finely serrated knife to cut squash into 4-5 rings. Place rings in glass baking dish, scoop in stuffing mixture and cover tightly with aluminum foil. Bake another 15-20 minutes, or until squash is tender. Serves 4-6.
