Ingredients:
1 unbaked pie crust
3/4 Cup (3 ounces) grated Swiss cheese
8 ounces imitation crab, flaked
1/2 Cup onion, chopped
1 pkg. frozen spinach, thawed & drained
1/8 teaspoon dried tarragon
1/8 teaspoon Old Bay seasoning
1/8 teaspoon ground nutmeg
1/8 teaspoon pepper
1 Cup evaporated skim milk
4 eggs, beaten
Directions:
Spray a 9-inch pie plate with nonstick cooking spray. Fit pastry into pie plate and crimp the edges. Sprinkle cheese over bottom of crust. Top with crab and set aside. Preheat oven to 375°. Coat a large nonstick skillet with cooking spray; place over medium-high heat. Add onion; sauté for 4 minutes. Add spinach and seasonings; cook for 2 minutes, allowing water from the spinach to cook away. Arrange spinach mixture over crab. Combine milk and eggs in a bowl; stir well with a whisk. Pour over spinach mixture. Place pie plate on baking sheet and bake for 45 minutes or until a knife inserted in center comes out clean; let stand 10 minutes. Serves 6.
