Crab & Macaroni Salad


Ingredients:
8 oz. uncooked macaroni
2 eggs
2 stalks celery
1 small onion
6-oz. pkg. imitation crab
1/2 Cup mayonnaise
1 Tablespoon sweet pickle relish
1-1/2 teaspoons lemon juice
1/2 teaspoon salt
1/4 teaspoon dried parsley
1/4 teaspoon black pepper

Directions:
Cook the macaroni in a large pot according to the package directions, then strain out the water and put the noodles in a large serving bowl. In a separate medium pot, slowly boil the eggs on medium high heat for 7-9 minutes or until they are hardboiled. Set the eggs aside. Chop the celery and onion into small cubes, and if necessary cut up the imitation crab into bite-size pieces. After they have cooled, chop the eggs into small cubes. Mix the celery, onion, crab, eggs and all remaining ingredients into the bowl with the macaroni. Let chill in refrigerator for 2 hours. Can be served alone, on top of a bed of leafy greens, or as sandwiches. Serves 4.
