Bratwurst Fettucine


Ingredients:
8 oz. uncooked fettuccine
3-4 whole canned tomatoes
2 small zucchini
1 large onion
1 medium sweet yellow or red pepper
3 garlic cloves
1 Tablespoon olive oil
1 lb. beer bratwurst or other sausage links
3/4 Cup feta cheese with herbs

Directions:
Cook fettuccine according to package directions, drain, rinse with cold water and set aside. Preheat oven to 450 degrees. Chop the tomatoes into bite-size pieces, slice the zucchini, onion and pepper, coarsely chop the garlic and combine these ingredients in a large bowl. Drizzle oil over vegetables, toss to coat, and place in a 13” x 9” x 2” baking dish. Bake uncovered for 20 minutes. Remove from oven and stir in sausage. Bake for an additional 5-10 minutes or until vegetables are crisp yet tender and sausage is cooked through. Add fettuccine and crumbled feta cheese to sausage mixture and toss to combine. Makes 5 servings.
