Ingredients:
1/2 head iceberg lettuce
1 grapefruit
2 oranges
2 apples
2 pears
1/2 Cup chopped nuts of your choice
6-8 ounces light raspberry yogurt
1 Cup diced cooked chicken or ham (optional)
Directions:
Shred the lettuce finely and set aside in a large serving bowl. Cut the grapefruit in half and juice one half into a separate small bowl. Peel the remaining half grapefruit as well as oranges. Split peeled grapefruit and oranges into sectors, cut sectors into thirds and set aside in a separate medium bowl. Leaving the apples and pears unpeeled, core and dice into 1/2-inch cubes and add to the citrus sectors. Add the nuts, then pour grapefruit juice and yogurt over the top and toss. Place the fruit mixture on top of the lettuce and lightly salt and pepper to taste. Add chicken or ham if desired. Serves 4.
