Peach Salsa


Ingredients:
1 peach
1/2 small red onion
1 small jalapeno pepper (optional)
1 Roma tomato
Juice of 1 lime
2 teaspoons olive oil
1 Tablespoon red wine vinegar
1/2 teaspoon salt
1/4 teaspoon pepper

Directions:
Finely dice de-seeded peach, onion, optional jalapeño and de-seeded tomato. Combine all ingredients in a small bowl, cover and refrigerate for at least 1 hour. Use as a garnish for salmon burgers or other summer foods.
