Ingredients:
12 ounces mahi-mahi fillets
1/8 Cup onion
1/2 Cup light mayonnaise
Light cooking spray
1/2 lemon
1/8 teaspoon garlic salt
1/8 teaspoon ground black pepper
Breadcrumbs
Directions:
The night before you plan to prepare this dish, put the fish in the refrigerator to thaw. Preheat the oven to 425 degrees. Chop the onion into fine pieces, combine with the mayonnaise in a small bowl and set aside. Spray a glass baking dish with the cooking spray, then place the fillets in the baking dish. Squeeze the lemon over the fillets, then sprinkle on the garlic salt and pepper. Spread the mayonnaise mixture on top of the fillets. Sprinkle each fillet lightly with breadcrumbs. Bake for 25 minutes or until the fillets flake easily with a fork. Serves 3-4.
