Citrus Roasted Chicken With Baked Apple


Ingredients:
4 oranges
3/4 Cup white sugar
2 Tablespoons olive oil
3.8 pounds chicken leg quarters
Salt and pepper to taste
4 apples
2 Tablespoons brown sugar

Directions:
Juice the oranges into a small sauce pan, add the white sugar and cook until reduced to a glaze, about half original amount. Preheat oven to 375 degrees. Grease a rimmed baking sheet or roaster pan with one Tablespoon of the olive oil. Place the chicken on the baking sheet, then lightly coat with the remaining oil and salt and pepper to taste. Bake the chicken for 1/2 hour at 375. Peel and core the apples. Remove the chicken from the oven and drizzle with half of the glaze. Add the apples to the baking sheet and sprinkle them with the brown sugar. Increase the temperature to 400 degrees and bake for 10 minutes. Remove the chicken and baste with the remaining glaze. Bake for 15 more minutes or until the chicken is cooked through and the apples have softened. Serves 4-5.
