Baked Stuffed Acorn Squash


Ingredients:
1 lb. pork sausage, browned and drained
1 onion, diced fine
2 stalks celery, diced fine
1 pear or apple, diced
1 acorn squash, halved and seeded
1 Tablespoon packed brown sugar

Directions:
Preheat oven to 375 degrees. Combine the sausage, onion, celery and pear/apple, then stuff mixture into the cavities of the squash. Sprinkle the brown sugar over the mixture. Place halves on a rimmed baking sheet. Bake 40-50 minutes or until squash flesh is easily pierced with a fork. To serve, scoop squash and stuffing onto plates. Serves 4-6.
