Ingredients:
6 medium potatoes
Salt & pepper to taste
2 stalks celery, diced
1/2 medium onion, chopped
2 slices bacon, uncooked
1/4 Cup sugar
1 Tablespoon flour
1/2 teaspoon salt
Dash pepper
3 Tablespoons vinegar
10 Tablespoons hot water, divided
1 hardboiled egg
Directions:
Wash potatoes and boil with skins on until they are tender. Remove the potatoes from the water to cool, then peel and slice. Sprinkle potatoes with salt and pepper, then add the celery and onion. Dice the bacon and fry until brown. Set aside the bacon drippings. Sprinkle the bacon bits over the potatoes. Combine the sugar, flour, salt, pepper, vinegar and 8 Tablespoons of hot water with the bacon drippings in a sauce pan, then bring the mixture to a boil. Add the remaining water and boil for 5 minutes. Pour the liquid mixture over the potatoes, mix and garnish with hardboiled eggs. Serves 4-6.
