Ingredients:
1/2 Cup onion, chopped
1 stick margarine, divided
2 lbs. potatoes, shredded
1 Cup sour cream
1 can cream of chicken soup
Salt & pepper to taste
1 Cup cheddar cheese, shredded
1 Cup cornflakes, crushed
Directions:
Sauté onion in 3/4 of the margarine, then mix in the potatoes, sour cream, soup, salt and pepper. Pour this mixture into a 9”x13” pan and top with the cheese. In a separate pan, melt the remaining margarine, mix in the cornflakes, then sprinkle them on top of the potato mixture. Bake for 1 hour at 350 degrees. Serves 8.
