Chicken Club Sandwiches


Ingredients:
1 lb. chicken breast fillets
2 Tablespoons vegetable or peanut oil
2 medium onions, sliced thinly
1 green bell pepper, cored and thinly sliced
2 Tablespoons mayonnaise
1 teaspoon Dijon mustard
1/2 teaspoon hot sauce (optional)
Mini sub buns or croissants
8 oz. black forest ham slices

Directions:
Pan-fry or bake the chicken until cooked through, slice thinly and set aside. Heat the oil in a skillet over medium high heat until it shimmers. Sauté the onions and pepper until they are softened but not browned. In a small bowl, mix the mayonnaise, mustard and optional hot sauce. Split and toast the buns or croissants, then spread with the mayonnaise mixture. Place the vegetables on the bread, then a slice of the ham and slices of chicken. Serves 6.
