Ingredients:
1 Cup uncooked white rice
1/4 Cup teriyaki sauce
1 Tablespoon cornstarch
4 cloves garlic, chopped
1 Tablespoon vegetable oil
2 zucchini , chopped
14 oz. pre-cooked chicken breast strips
Directions:
Cook rice according to package directions; drain and set aside. In a small bowl, mix the teriyaki sauce with cornstarch and set aside. In a skillet over high heat, sauté the garlic in oil for 1-2 minutes. Add the zucchini and chicken, stirring for 2 minutes. Add the rice and stir for 3 more minutes, then add the sauce/cornstarch mixture and stir until the sauce is hot and begins to thicken. Serves 4.
