Simple Chicken Cordon Bleu


Ingredients:
4 chicken breast fillets
4 slices Swiss or Provolone cheese
4 slices ham
1/4 Cup all-purpose flour
1 egg, beaten
1 Cup Italian seasoned bread crumbs
4 Tablespoons butter
1/3 Cup chicken broth
1 Cup sour cream
1 can cream of mushroom soup
1/3 Cup water
Garlic powder and oregano to taste

Directions:
Pre-heat oven to 350 degrees. Pound chicken breast fillets to 1/4-inch thickness. Place one cheese slice and one ham slice on each fillet. Roll up each fillet using toothpicks to secure. Dredge each in flour, shake off excess, then dredge in egg and finally in bread crumbs. Place each roll seam side down in a baking dish that has been sprayed with vegetable oil. Place 1 Tablespoon of butter on top of each roll. Bake for 35 minutes or until juices run clear. Meanwhile, in a saucepan, combine broth, sour cream, soup and water, then season with garlic powder and oregano. Simmer sauce on low heat, stirring until thickened. To serve, pour sauce over chicken rolls. Serves 4.
