Roasted Whole Chicken


Ingredients:
2 teaspoons salt
1 teaspoon white sugar
1/8 teaspoon ground cloves
1/8 teaspoon ground allspice
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cinnamon
1 (4-lb.) whole chicken
5 cloves garlic, crushed

Directions:
The night before your meal, combine salt, sugar, cloves, allspice, nutmeg and cinnamon in a bowl and mix. Place chicken in large baking dish and rub the outside of the chicken with this mixture. Cover with foil and let marinate in refrigerator for 24 hours. When ready to bake, preheat oven to 500 degrees. Remove chicken from fridge and stuff garlic into chicken cavity. Place chicken on a rack in a roasting pan, breast side down. Roast for 15 minutes. Baste chicken with pan drippings, reduce heat to 425 degrees, and roast for 30 minutes more. Chicken is cooked when internal temperature reads 180 degrees. Let cool for 10-20 minutes, then cut up chicken to serve (see instructions on page 6). Serves 4-6.
