Ingredients:
1 Cup white rice
1 medium onion, chopped
2 stalks celery, diced
1 red bell pepper, seeded and chopped
4 Cups chicken broth
Hot sauce to taste (optional)
1 lb. chicken breast strips, cooked
3 pre-cooked smoked sausages, cut into 1/2-inch coins
8 oz. imitation crab sticks, cut in 1/2-inch pieces
1 Cup okra, chopped (optional)
Directions:
Prepare the rice according to the package directions. In a large stockpot, cook the onion, celery and pepper in the broth over medium heat until they are cooked almost through. Add the optional hot sauce, chicken and sausage and let cook for 10 minutes. Add the crab and cook for about 5 more minutes. To serve, ladle the jambalaya over the rice in bowls. This can be made into a gumbo by adding okra to the vegetables. Serves 5-6.
