Herb Crusted Chicken Breast


Ingredients:
1.8 lbs. bone-in chicken breast
2 Tablespoons olive oil
1 Tablespoon grated onion
2 garlic cloves, minced
1 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon dried rosemary, crushed
1/2 teaspoon coarsely ground pepper
1/4 teaspoon rubbed sage
1/8 teaspoon dried marjoram
4-1/2 teaspoons minced fresh parsley

Directions:
Preheat oven to 425 degrees. Coat a medium baking dish with cooking spray and place chicken in it. In a medium mixing bowl, whisk together the olive oil, onion, garlic and all of the herbs except the parsley. Brush this mixture over the chicken. Bake uncovered for 30-40 minutes, basting occasionally. Chicken is cooked when juices run clear and a meat thermometer reads 165 degrees. To serve, remove and discard skin, drizzle with juice from baking dish and sprinkle with parsley. Serves 4-5.
