Nutritious Delicious Sandwiches

UW-Extension Update, by Jean Draeger, UW-Extension, Waukesha County

Summer lunches or light suppers based on sandwiches can be a real summer winner.  We often get in a rut with the same old lunch meat and bread.  Here are some nutritious low calorie ideas:

Low-Calorie Sandwich Ideas

  • Low fat (or regular) cheese and a tomato slice on a whole wheat toasted muffin.

  •
  • Pita bread with chopped fresh vegetables with a low fat dressing.  One suggestion is shredded cabbage, sliced tomato, diced pepper (any color), thinly sliced cucumber and shredded carrots.

  • Add a low fat creamy dressing like ranch or peppercorn.
  • Low fat dressing such as creamy Italian, thousand island or ranch will dress up tuna, chicken or turkey with more zing than mayonnaise.  Your choice of bread or rolls.

  • Salsa combined with low fat mayonnaise, low fat cream cheese or low fat sour cream makes a tasty spread for bread or a topping for meat.

  •
  • Low fat cottage cheese mixed with whole berry cranberry sauce or chopped fresh/canned peaches, apricots, pineapple or apple sauce.  Serve on cinnamon or oatmeal bread.  You can even eat it without the bread.

  •
  • A bagel topped with herb flavored cream cheese.

  • Accent with salad greens, shredded carrots and sliced cucumber.

  • Add alfalfa sprouts if you like.

  •
  • Lean cooked pork or chicken, chopped and mixed with celery, onions and plain low fat yogurt.

  • Serve with your choice of roll or bread, lettuce and tomato.

Use these ideas to jump start some of your own creations!
