Football Feast Renee Vertin

UW-Extension Update, by Renee Vertin, R.D., Wisconsin Nutrition Education Program, Washington County

Are you ready for some football? You will be if you purchased the Family Meal items from the December SHARE Menu!

Much of the food for football feasting requires little to no preparation. You can recruit children and others to help you in advance with food and decorations.

Let’s launch into the food you’ll serve in the first quarter- vegetables and dip. Prepare by cutting veggies into pieces that lend well to dipping- cauliflower trees, celery and carrot sticks, cucumber coins, and bell pepper rings. Some football fans don’t like raw vegetables; tender-crisp veggies (steamed, then chilled) may offer more appeal because they are easier to chew.

The half-time intermission is a great time to dish up the “main course.” Place BBQ pork riblets or mesquite chicken breasts on hearty buns like Kaiser or whole wheat. Each person can pile high the sandwich trimmings such as lettuce leaves; thin slices of cheese, tomato or red onion; pickles; mustard; mayonnaise; Italian dressing. Little Smokies can be speared with frilly toothpicks you’ve set out. No feast is complete without the potato salad, and your SHARE Family Meal helps out there, too.

You and your guests might appreciate a lighter food being serve at the fourth quarter intermission- especially if your team isn’t doing too well. The SHARE apples can be cored and cut into wedges for dipping.

Fans who nosh all through the game might welcome your homemade trail mix. Simply mix SHARE’s dried apricots (diced) with cereal squares, mini marshmallows, and dry roasted peanuts for a tasty treat.
